For One Cake:
1: zucchini 300g (peeled & grated)
2: plain flour 1 & 1/4 cup
3: unsweetened cocoa powder 1/2 cup
4: baking soda 1 tsp
5: salt 1/2 tsp
6: instant coffee 1/2 tsp
7: vanilla essence 1 tbsp
8: sugar 1/2 cup & 4 tbsp
9: oil 1/4 cup
10: yogurt 1/4 cup
11: eggs 2
12: milk chocolate 100g (chopped)
13: milk chocolate 40g (chopped for topping)
Preheat Oven 350f, 180c, Gas Mark 4.
1: grease and dust cocoa powder the loaf tin, size 9 x 5 inch (23 x 13cm), peel grate the zucchini and keep in a sieve to remove extra liquid.
2: in a bowl sieve plain flour, cocoa powder, baking powder, coffee, salt and mix well with a spoon.
3: in a bowl add eggs, sugar and whisk till combined.
4: now add oil, yogurt, vanilla essence and whisk till combined.
5: then add the dry mixture of plain flour, whisk till well.
6: now add the zucchini, milk chocolate mix well.
7: transfer the batter in the loaf tin top it with milk chocolate and bake for 45 to 60 minutes, or till a toothpick inserted into the centre comes out clean.
8: once baked leave it to cool for 20 minutes in the tin and then take it out and let it cool on a rack.
9: cut and serve with tea or coffee.
