1: mutton 1 kg
2: tomatoes 4 medium (sliced)
3: thick greek yogurt 1 cup
4: onions 2 large (finely chopped)
5: fresh ginger 1 & 1/2 inch (Julian)
6:ginger & garlic paste 1 tbs
7: whole red chilli 6
8: red chilli powder 1 ts
9: salt 1 ts
10:garam masala powder 1 ts
11:cumin seeds 1 tbs (dry roasted and crushed)
12:coriander powder 1 tbs
13:turmeric 1/2 ts
14:green cardamom 6
15:black cardamom 3
16:bay leaves 2
17:tomato paste 3 tbs
18:green chilli 4 (sliced)
19:fresh coriander handful
21:water 1 glass
1: marinate meat with yogurt, salt mix cover and keep aside for 1/2 hour.
2: heat oil add green cardamom, black cardamom, bay leaves, fresh ginger, onions and cook till gets golden colour on high flame.
3: then add tomatoes, tomato paste and cook till the oil comes on the surface and tomatoes reduced.
4: now add the whole dry red chilli, red chilli, turmeric, cumin, coriander powder, ginger and garlic paste mix, then marinated meat and cook on high flame for 3 minutes.
5: after 3 minutes cover and cook on low to medium flame till the meat is tender and water dries.
6: now add green chilli, garam masala powder, fresh coriander mix.
7: serve hot with roti or naan.
