1: self raising flour 250g
2: sugar 250g (caster sugar)
3: butter 250g (salted and room temperature)
4: baking powder 2 ts
5: walnuts crushed 1 cup
6: coffee 2 tbs (heeped mixed with 100ml water)
7: eggs 4
8: baking pan greased and place baking paper in the bottom
Coffee Butter Cream Topping:
1: icing sugar 200g
2: butter salted 125g
3: coffee 1 tbs
4: walnuts whole for garnishing
1: preheat the oven 350f, 180c, gas mark 4.
2: in a bowl add self raising flour, baking powder mix well, then mix water with coffee and keep aside.
3: in a large bowl whisk the sugar and butter till smooth and creamy.
4: then add one egg at a time with 1 tbs of flour and whisk, repeat this till all the eggs are add with 1 tbs flour and keep whisking, then add the coffee and water mix & whisk, now add the remaining flour and whisk till everying in well mixed.
5: now add the nuts and mix well.
6: then add the batter in the baking pan, spread in evenly.
7: place the baking pan in the oven and bake for 25 minutes or till you do the tooth pick test by inserting it in the middle of the cake when comes out clean it is baked.
8: once baked let it cool down completely, remove it from the pan and place it on the wire rack to cool futher.
9: then in a bowl add the soft butter, icing sugar and whisk till creamy, now add the coffee with a ts or tbs of water and whisk again, your butter cream frosting is ready.
10:once the cake has cooled top it with the butter cream frosting, and garnish it with the walnuts.
