1: butter milk 1/2 cup
2: plain flour 2 cups
3: caster sugar 3/4 cup
4: fresh blueberries 2 cups
5: salted butter 110g (room temperature)
6: caster sugar 4 tbsp
7: egg 1 (room temperature)
8: vanilla essence 1 tsp
9: salt 1/4 tsp
10:lemon zest 2 tsp
11:baking powder 2 tsp
recipe: preheat oven 350f, 180c, gas mark 4.
1: in a bowl add the blueberries, plain flour 2 tbsp and toss it, keep aside.
2: in a bowl add butter, sugar, lemon zest beat till smooth and creamy.
3: then add vanilla essences, egg and beat till combined.
4: sieve plain flour, salt, baking powder, mix with a spoon.
5: now add the flour mixture in the butter mixture with butter milk and beat till combined.
6: fold the blueberries in.
7: grease the dish, add the batter, sprinkle sugar and bake for 35 to 45 minutes, check with a tooth pick for doneness.
8: serve hot or warm with milk, tea coffee.
